Shaker Cook

SHAKER PUMPKIN PIE

 
1 cup cooked and strained pumpkin 3 eggs
2/3 cup maple or brown sugar 2 cups evaporated milk
1/2 tsp. ginger 1/2 tsp salt
1/2 tsp. cinnamon 1 unbaked pie shell

Mix together 1 cup cooked and strained pumpkin, 2/3 cup maple or brown sugar, 1/2 teaspoon ginger, 1/2 teaspoon cinnamon, 3 eggs, 2 cups evaporated milk, 1/2 teaspoon salt. Pour into unbaked pie shell, bake in a 350° oven until knife blade inserted in the center comes out clean.
